A curry paste is spice-craft in a jar: ingredients ground and balanced so every dish starts from the same authentic base. From everyday ginger-garlic to slow-Sunday rogan josh, one spoonful replaces a shelf of spices and years of practice.
How to use
Fry 2–3 spoonfuls of paste in a little oil until aromatic.
Add onions, then your protein or vegetables, and coat well in the paste.
Pour in water, coconut milk, cream or yoghurt as the recipe suits, and simmer until done.
Keep the jar refrigerated after opening; a 300g jar makes 4–6 curries.
